Coconut Cupcakes... kinda

The NEX, where I work, has a huge fundraiser every year where the employees in different departments get together and sell their little hearts out whichever way they can. A lot of people have bake sales, or make hot food. Some people this year even were selling car washes. Each department gets pretty creative and there's always good food. This fundraiser usually lasts for a few weeks in April so all the departments can have a chance. This year, since we have a new manager who is extremely competitive, we are having 2 different days where we are selling fundraiser items. First, we are having a bake sale, and my cupcakes are getting featured (since lately I seem so be getting a lot of 'publicity,' as I like to call it), but everyone in the salon is baking something to chip in. Secondly, we are taking orders for Leonard's malasadas, which are obviously a local addiction. So my manger thought it would be a great idea that I may mini bite-sized versions of my cupcakes a few days in advance that way we can entice people to visit and buy from our bake sale. I'm telling you, this lady is serious business in competition, and a total genius, might I add! Just while we were upstairs in the admin offices handing out samples, we also received 22 pre-orders for malasadas by the dozen AND I got to give out my personal information to about 5 people, on top of the many people who are interested in coming down to buy from the bake sale. Anyways, here is a picture of my samples:




I made mini cookies'n'cream and coconut cupcakes. I have never brought either flavor to work so I decided that it would be great to get new flavors out there considering about half of my orders come from coworkers. The coconut cupcakes are my personal favorite. If you are around the Pearl Harbor NEX on Wednesday the 11th from 9-12, please stop buy and purchase some baked goods! I'm assuming from the reaction today that the cupcakes are going to sell pretty fast :)!

That should be more than enough! I know many people would like a red velvet cupcake but I just havent figured out a recipe that I'm in love with and I won't sell anyone anything that I'm not completely satisfied with. If you have any other ideas or flavors you might want, then please feel free to let me know! It will take extra time but I am always up for an experiment.
I prefer to do each flavor by the 2 dozen, but I will consider doing certain flavors in a one dozen batch.
Pricing depends on the recipe since some recipes take far more ingredients than others, please contact me for more information.

Deliciousness, recently.

Thanks to you fine people, I have had a pretty steady flow of orders for cupcakes since I started this blog. It's no surprise that cupcakes are the most popular!
The more orders I get, the more beautiful I can make them, too. All the money I get from these orders goes directly back into supplies and equipment. Therefore, my little baking archive isn't so little anymore ;). Here's a recent order I did for Amy, my neighbor; two dozen each raspberry lemon and cookies'n'cream.


I have had all types of order requests; anything from first birthdays, to graduation, ombudsman meetings and even weddings! I am seriously enjoying the different orders and I love customizing each one to fit the occasion.

Raspberry Lemon Cheesecake

Apparently I've been in the mood for raspberry lemon lately. This cheesecake was delicious... I say "was" because it was gone in 2 days. Don't worry- I shared :)

Raspberry Lemon Cupcakes

This is yet another set that I invented yesterday for the same party I made the Oreo cupcakes for. I have been trying to find a recipe for good lemon cake/cupcakes for a really long time now. After one recipe that I tried yesterday, which was a huge fail, I decided again to try and invent my own. I could not be happier with the result. These cupcakes are light, but not dry, and they actually have a great lemon flavor! I will definitely be making more of these in the future. The raspberry frosting is one I've been making for a while and it goes perfectly with the lemon cake. These were actually the first to be gone at the birthday party yesterday!

Oreo Cupcakes

I kept finding recipes on the internet for these cupcakes but everyone I tried, I hated. After throwing away 2 batches, I finally decided I was just going to make my own, so I came up with this recipe yesterday. These cupcakes were a huge hit for a birthday party that I made them for. They were definitely delicious and perfect for the Oreo lover. I'm just glad I can add another solid recipe to my personal collection.
